Peanut Butter Oatmeal Chocolate Chip Cookies
(I believe this recipe came from cooks.com)
1/2 c. butter, softened
1/2 c. sugar
1/3 c. brown sugar
1/2 c. peanut butter
1/2 t. vanilla
1 egg
1 c. flour
1 t. baking soda
1/4 t. salt
1/2 c. oats
1 c. chocolate chips
*In a medium bowl, cream butter, sugar, and brown sugar until smooth. Stir in peanut butter, vanilla and egg until well blended. Combine flour, baking soda and salt- stir into batter until moistened. Mix in oats and chips. Bake at 350 degrees for 10 minutes.
***I use a 2 T. spring loaded scoop to drop the cookie batter, leaving the cookies more uniform in size.
***This is a quick cookie recipe, which I love for those times I really want a homemade cookie but don't want to spend 2 hrs. baking.
***This recipe makes about 16 - 20 cookies.
***With peanut butter and oatmeal, I do believe a cookie or two could count as breakfast...at least that's my excuse!
